SOLD OUT! The 2007 Perception Sangiacomo Vineyards Chardonnay combined fruit from the Vella Ranch Vineyard and the Green Acres Hill Vineyard. Both sites are planted with the Wente selection of Chardonnay which produces extremely small clusters of grapes, has notoriously low yield and produces extremely complex wines. The fruit was harvested at night, delivered to the winery early in the morning and gently pressed. The juice was transferred into 60-gallon French oak barrels for a long, slow fermentation by naturally occuring yeasts and maololactic bacteria. The native-yeast fermentation and barrel againg have resulted in a wine that is rich, unctuous and complex.
